These recipes for Apricot pancakes allows you to cook and serve pancakes that are healthy, chunky and fluffy. The Apricot pancakes recipe is much tastier, if it is served with maple syrup and butter. The making of Apricot pancakes is similar to any ordinary pancake batter; the only difference is that in this recipe you can add variations to make it better. The first step to making your tasty breakfast pancake is to prepare the batter for the Apricot pancakes. For this, you sift flour in a large bowl to which egg has to be added. On adding the egg, whisk lightly with a fork so that the egg and flour mixture combine properly and do not form lumps. Next, pour in the milk and continue blending till the batter is fine to touch. Put in the apricots and chocolate chips to the batter. Now, blend the batter in a blender for a minute until the apricots and chocolate chips merge with the batter. At this point, the batter should be soft.
When the batter is ready, warm a skillet or frying pan over medium heat. When the heat is just right, brush it with melted butter using a pastry brush. Scoop the required quantity of the pancake batter onto the skillet or frying pan and flatten the mixture so that the pancake is even.
Cook the Apricot pancake till bubbles appear and the color of the top surface is light brown. Flip the pancake and cook till this side also becomes brown in color. When the pancake is ready, remove from the pan and make another one. In between each pancake, brush the pan with melted butter. The buttermilk pancake can be served hot along with butter and maple syrup or chocolate chips on top of it.
