Mouth Watering Fish Pie Recipe

Some of you may not know that you can do a lot with your fish pie, which does not have to be cooked in the same boring monotonous way.

For those who find cooking rather tedious, this fish pie recipe would be easy to prepare and interesting to eat too.


Ingredients


  • 500g cod or any other fish such as salmon, trout etc, skinned
  • 150g smoked haddock
  • 200g medium-sized prawns
  • 5 large potatoes
  • 1 large onion finely chopped
  • 2 carrots finely diced
  • 200g fresh peas
  • 1 cup milk
  • 250ml double cream
  • 50g butter
  • 1 bay leaf
  • 150g grated mature cheddar cheese
  • A handful of fresh herbs such as parsley, thyme and tarragon
  • Sea salt
  • Freshly ground pepper

Procedure


Peel and cube the potatoes and drop into a colander of boiling salted water and allow to boil for 20 minutes or until the potatoes are soft. In another pan of salted water, boil the shelled peas until soft but not overcooked. Next, take a sauce pan and put in the fish, except for the smoked haddock that can be prepared earlier or bought ready from the supermarket. Pour in the milk and add the bay leaf and cook over the hob until the fish is tender.


In the meantime, preheat the oven to 220 C or 425 F. In yet another saucepan, heat half the butter and add the chopped onion and carrots and sauté till the vegetables are soft. Add the cream and bring to a boil and at the same time add the fresh herbs, salt and pepper according to taste. Cook allowing the sauce to reduce to a thick consistency before removing it from the gas.


By now the peas would be ready and so would the fish. Drain the peas and allow to stand. Remove the fish fillets from the pan, but do not throw the milk that has remained in the sauce pan, however, you may discard the bay leaf that had been added to give flavour. Chop the fish fillets into small pieces and set aside. The potatoes would have boiled to a soft texture by now. Drain and allow to stand for a while so that the excess water in the potatoes dries out.


Once the potatoes are cool, mash them along with the milk that you have left over from the fish pan and some of the remaining butter, a little salt and pepper. Add the milk a little at a time so that the potatoes do not get too soft. Once this is done, add the peas and mix, but do not mash. Now prepare a casserole and grease it with some butter and put in the cooked fish, the smoked haddock and the prawns and cover with the prepared white sauce.


Layer the fish with the mashed potatoes and peas and level the casserole to make the top smooth. Sprinkle with the grated cheddar cheese and pop into the oven, baking the fish pie for 20 minutes. Serve hot with a crunchy spinach salad.

Classic Nutty - Dates Cake Recipe

Ingredients
  • 2 1/2 cups all purpose floor
  • 2 1/2 cups water
  • 1 1/2 cups dates (pitted and chopped finely)
  • 2 cups raisins
  • 1 1/2 cups chopped walnuts and almonds
  • 1 1/3 teaspoon baking soda
  • 1 cup butter + 5 tbsp butter
  • 3 large eggs
  • 1 1/2 teaspoon vanilla extract
  • 1/3 tea spoon salt
  • 1 cup sugar
  • 3/4 cups brown sugar
  • 3 tbsp cream (thick and heavy)
  • 2 cups brown sugar
Directions

First preheat oven at 350 deg F, boil water raisins together in a greased pan and when and once boiled cook it for additional 5-7 minutes. Take out the pan from heat and now add chopped dates into it. now keep it aside and take another medium sized bowl and mix one cup of butter and 1 cup white sugar together until mixture turns fluffy and creamy. now add eggs gradually one by one by beating it well. After adding all the eggs, now add vanilla extract again mix it then add floor and salt and again beat it well to form a smooth mixture now scoop in prepared dates and raisin mixture into it and mix it well to form a smooth lump free cake batter.

Take a baking pan, grease it and cover the bottom with wax paper. now pour in the batter into baking pan uniformly. Put the baking pan into the preheated oven and cook it for 45- 50 minutes. check the cake after 42-45 minutes by inserting a knife or tooth-pic at the centre, if it comes out clean that indicates that cake is cooked well. now take out the cake pan from the oven and keep it aside to get cool.

Meanwhile now put oven to broil. take a pan, put 4-5 tbsp butter into it melt the butter and put nuts (almonds and walnuts), brown sugar and heavy cream mix them all together and spread this topping mix uniformly over the hot cake and keep the cake into the broiler for 2.5 minutes until it turns little brown. now let the cake get cooled enough before serving it to your family and friends.

  • 500 gm chicken
  • 100 gm cottage cheese (paneer)
  • ½ tsp salt- according to taste
  • Red chili powder- a pinch
  • 20-25 gm oil
  • 20-25 gm ghee/ butter
  • 425 ml orange juice
  • 10-12 gm corn flour
  • Black pepper- to taste
  • 20-25 gm sugar
  • 10-12 gm coriander greens
Method
Wash the chicken pieces well. Drain water and dry the chicken pieces. Rub on salt, black pepper and red chili powder. Marinate for 5 minutes.

Heat oil in a pan and fry it well till it gets brown. Add 200 ml water to orange juice and put it in pan. Mix the fried sugar and orange juice well. Cook for 10 minutes. Add corn flour and stir it fast. Don’t let any lumps to form. When the soup becomes thick, remove it from stove.

Heat ghee in a pan. Fry marinated chicken pieces till it turns light brown in color. Add orange juice gravy. When it is boiled well, add cottage cheese (paneer) cut in cubes. Mix it well. Cook for 5-6 minutes. Remove it from stove. Garnish it with finely chopped coriander leaves.
